recipes

A few people wanted the recipes that I mentioned in my last post, so instead of e-mail, I will just post them here.

First, as for crepes, they are as simple as pancakes, but they can be a lot more fun, and a nice change. The fillings are endless.  Our favorite is nutella and strawberries, and you can roll it up like a burrito.  The recipe I enjoy the most is found here:

There are a lot of crepe recipes online, but I prefer to use ones with whole wheat in them.  Most of them taste very similar. 

Here is the waffle recipe:

2 eggs
1 3/4 cup milk
1/4 cup oil
1/4 cup applesauce
1 t vanilla
1 cup whole wheat flour
1/2 cup ground flax seed
1/4 cup oatmeal (i use uncooked because I like the texture it provides, but if you dont want as much texture, you can cook it first)
4 t baking powder
1 T sugar (or you can use honey if prefer that)
1/4 t salt

Now, from my experience, this batter is pretty thick.  I guess you can add more milk if you want, I'm not sure how it would affect the end product.  I usually have to cook it a few minutes longer than when the light goes off on my waffle maker.  Just wait until there is no more steam, and it is usually done.  My kids enjoy them, and they are pretty healthy and contain lots of Omega fatty acids.  We like eating them with pure maple syrup and/or fresh strawberries.
